Just when many of us thought that eating lots of fresh green leafy vegetables was the key to good health,along comes an outbreak of bacterial contamination in bagged spinach that has frightened consumers and led to a recall of all affected brands.The contamination,detected only in spinach packaged at a particular processing plant in central California,reveals how silly we were to assume that spinach in aled bags would necessarily be safer than fresh spinach expod to the environment.
So far the outbreak,caud by a virulent strain li bacteria,has sickened at least187people in26states,causing one confirmed death,29cas of kidney failure and97hospitalizations.The worrisome trend is that while illness caud li in meat has been declining,bacterial contamination of fresh produce is proportionately rising.Some20outbreaks of illness caud li contamination of leafy greens —18in lettuce,2in spinach—have been reported over the past decade,

Investigators don’t know yet whether the current problem aro primarily in the growing fields or at the bagging facility.Given li typically lives and multiplies in the intestines of ruminant animals,like cattle,sheep and deer,one possible source is the manure on nearby cattle farms.The bacteria can be carried into streams or tracked into the fields by wild animals and can infiltrate water ud for irrigation or washing the spinach.

Roughly half of the20outbreaks have been traced to central California, suggesting something amiss in the environment or process ud there.Regulators are leaning on the food industry to clean up its act,and the industry is scrambling to comply.
