1.GREETING GUESTS AT THE ENTRANCE 入口迎接客人
Guests will be greeted within 10 conds of arrival. If hostess is handling another guest, other staff that is near by the entrance should acknowledge them right away.
门童需在客人进门前为客人拉门,迎宾需在客人到达10秒内向客人问好,如果迎宾在接待另外的客人,在入口附近的其他员工应立即向客人致意。
Guest will be greeted promptly and pleasantly with a warm smile. 及时愉快热情的问候客人
Chine guest should be greeted in Chine, all the other guests in English.
中国客人用中文问候,外国客人用英文问候,或其他语(如果知道)
Example :      Good evening./Buenas noches/Boa noite/Buona ra/Bon soir/Guten abend
例如:            晚上好(英)/西/葡/意/法/德 
Welcome to LA PAELLA Restaurant. 欢迎光临XX西餐厅
Have you made the rervation, Sir/Madam? 请问您有预定吗,先生小姐?
How many person would you have, Sir/Madam? 请问您一共几位?
Plea go this way, Sir/Madam.这边请。
2.ESCORTING AND SEATING GUESTS 陪同客人并领位入座
Guests should be escorted to their table, the hostess walking in front of guests, adapting to the speed of guests.  客人应被陪同护送到他们的桌子,迎宾应走在客人前面,并迎合客人的行走速度。
Guests will be ated only at a clean and neat table with completed elegant tting.
客人只能在摆台完整优雅,并干净整齐的桌子入座。
Always ask guests if they prefer the table you arranged. 总是询问客人是否喜欢您安排的桌子。
Chair should be pulled for ladies first then gentlemen.应首先为女士拉椅子,然后是男士。
Remain guests if they prefer to hand up their large coats.
询问客人是否需要挂起或寄存外套,如需要并帮客人脱下外套。
Unfold napkin nicely for ladies first then gentlemen.先为女士打开餐巾,然后男士。
Drink list should be prent to guests without open it, hostess should introduced the waiter/tress to guests and wish they an enjoyable meal.“Plea enjoy your lunch/dinner!
酒水/饮料单应关闭着呈现给客人,迎宾应为客人介绍服务生并预祝用餐愉快。
Go back to the entrance as soon as possible. 迅速回到入口领位台处。
3.TAKING BEVERAGE ORDER 为客人点酒水
Waiter/tress should introduce him/herlf to the guest. 服务生向客人自我介绍。
经典绕口令大全suggest the starting drink like Aperitifs, Cocktails or Champagne. 介绍第一杯饮料,如矿泉水,鲜榨果汁,啤酒,开胃酒,鸡尾酒或香槟等。
Suggest the 2nd drink or prenting the wine list.介绍第二杯饮料或葡萄酒单
Repeat all orders completely and write down correctly.重复客人点单并正确记录
Example:    May I recommend you a very nice Spanish  wine from our wine menu,
sir / madam?

4.SERVING BEVERAGE 服务酒水
Beverage will be rved within 5 minute after ordering.酒水需在点单后5分钟内服务完毕
Beverage will be offered by bartender after receiving captain order or ( Micros ).
酒水需在吧员得到机打或手写的点单后制作准备。
现在做什么最赚钱All beverages are rved from right side of guest table.所有酒水需从客人的右手边服务,如实在空间太小或行动不便时可例外。
Beverage must be poured for all guest and refilled.四级考试日期应为所有客人服务酒水并续加。
学生自我鉴定Logo of bottles must t on the guest table and face to guests.
瓶装饮料或酒的商标需面向客人。
Wine cooler and stand with napkin will be ud for white wine or Champagne.
服务白葡萄酒或香槟时需用冰桶及冰桶架。(冰水各1/2)
Wine by the bottle must prent to the host to check before open it.
瓶装酒在开之前需为客人秀酒并陈述酒庄名,产地,葡萄种类,年份,以便客人确认
Tasting of the wine must done by the host, then pour the wine to ladies first.
试酒应由点酒的人或主人完成,然后从顺时针第一位女士开始倒酒。
Wine glass should be plated on the guest table before prenting the bottle wine.
酒杯应在展示酒之前准备好。
5.SERVING BREAD, BUTTER AND TAPAS/CANAPE/AMUSE BOUCHE
服务面包及小吃
Ask guest if they prefer mayonnai spanish style, butter or olive oil and balsamic.
询问客人面包需要配蛋黄酱,还是黄油,或是油醋汁
Prent our fresh butter or olive oil accordingly.服务面包(Portugue bread)及配料。
rving the 'canape/amu bouche' if have. 服务小吃。
6.PRESENTING MENU AND TAKING THE FOOD ORDER 侧面头像男提供菜单并点单
Menu should be prent at right side of the guest table without opening the menu cover.
Always u suggestive lling. 菜单应关闭着从右边递给客人,总是为客人提供建议。
Mention daily special. 介绍每日例汤,推荐菜。
Always recommend t menu for large group of guest over 8 pax.
当集体客人超过8位时总是推荐定制套餐。
Never refu any special order before check with master Chef.在询问主厨前,永远不拒绝客人对菜品的特殊要求。
Ask guest for the relative cooking style, sauce or condiments if it is necessary.
某些菜品需要询问客人喜爱的烹饪方法,牛排/羊排熟度,酱汁。
Recommend some wine to go with the dinner(especially steak or lamb) again if they don’t order any wine.
如果之前客人没点葡萄酒,服务生也未对其介绍,此时可建议是否需要葡萄酒搭配所点菜品。
Repeat all order completely and write down on the notepaper.  重复客人的点单并清楚记下
Link into Micros machine right after the order with ating code.
将客人所点菜品输入点单机,并打出对账单,标上座位号,交给厨房出菜口及跑菜员
Inform kitchen for any special request.  如有特殊要求需输入菜品要求并告知厨房
7.ADJUSTING TABLE 调整餐桌餐具
Move away the extra tting from guest table. 撤除桌上多余的摆台。
