INTRODUCTION
The Manger’s Remarks
The reputation of a hotel is made up of the degrees of comfort and rvice offered to the guests, but often one hears the words, “a very comfortable hotel but the food was poor.” More and more hoteliers come to realize that food and beverage rvice is a major factor in hotel operation. In many large hotels, it brings in more income than room rentals.
There are a number of different areas offering a variety of meals and rvices all within a hotel the restaurant, grill room, different bars, cafeteria and coffee shop as well as room rvice, lounge rvice and banqueting. The operation of a restaurant is a complex mixture of components in a total system. The food and beverage department involves many people working together as a team. So group cohesiveness is of particular significance there.
Good cooking is regarded as an art. Moreover, the food and beverage department employees, especially waiters, waitress and bartenders, can play an extremely important role in creating a pleasant atmosphere, which is one of the rvices our hotel lls. High quality rvice is dependent on the waiter, and other food and beverage department staff as well, having a love or his job and a knowledge of its working right down to the last detail. The initial contact with the customer can be a vital contribution to the success of his meal. A good waiter tries to satisfy the requirements of both the customer and the restaurant at once.
In conclusion, good knowledge and skill, a cordial smile, plenty of courtesy with sincere effort and efficiency can certainly cook up a most inviting “dish”, a “dish”which will bring into full play the motto “Reputation first, customer foremost”. That is a consummation devoutly to be wished.

1-1 Shanghai Cocktail
Scene: When Mr. Bellow (B) walks into the bar, the bartender (BT) greets him.
BT: Good evening, sir.
B: Good evening.
BT: Mr.,…?
B: Henry Bellow.
BT: Ah, yes, Mr. Bellow. Are you staying at our hotel?
B: Yes, I’m in Room 908.
BT: Thank you, Mr. Bellow. Have you any thing in mind as to what to drink or may I make a few
suggestions?
B: I have had enough Gin Fizz and Bloody Mary.
But I have to idea about Chine cocktails.
BT: Would you prefer our cocktail Shanghai cocktail?
It’s a mixture of real Chine ingredients.
B: That’s good.
(The bartender makes the cocktail for Mr. Bellow and hands it to him.)
BT: Here is your Shanghai cocktail, Mr. Bellow.
B: Thank you. Oh, it tastes excellent.
