摘 要：以柚子皮、柚子肉、柠檬皮和柠檬肉为原料，辅以蜂蜜、冰糖和粘稠剂等配料，通过单因素和正交试验，确定了柠檬蜂蜜柚子茶的最佳配方，即柚果浆与柠檬果浆的复合比例为20∶3、冰糖与蜂蜜的复合比例为5∶6、柠檬酸0.4%，黄原胶为0.05%，制成的柠檬蜂蜜柚子茶风味独特、酱体均匀细腻，是具有营养保健功能的食品，有一定的市场潜力。

Abstract：In grapefruit peel, grapefruit, lemon rind and flesh meat as raw material, supplemented with honey, sugar and viscous agent and other ingredients, through single factor and orthogonal test, the best formula lemon honey grapefruit tea were determined, namely composite proportion of pomelo fruit pulp and lemon pulp is 20∶3, the composite proportion of sugar with honey for the 5∶6, 0.4% citric acid, 0.05% xanthan gum, made of lemon honey grapefruit tea unique flavor, sauce body even delicate, has functions of nutrition and health care food, have a certain market potential.

柠檬蜂蜜柚子茶作为一款四季可饮用的饮品，不寒假安全教育教案
仅口味极佳[1]，而且具有美白养颜的功效[2]。蜂蜜作为
3个字的网名大众化的食品，其中的L-半胱氨酸成分具有排毒作用，
能较好的改善由毒素聚积而引发的疾病。蜂蜜还是一
种保健食品，蜂蜜主要成分为可被人体直接吸收的单
糖[3]，新鲜的蜂蜜中含有70%以上的葡萄糖和果糖，
肠壁细胞能够直接吸收利用该部分糖类，具有助消化

的功效，同时蜂蜜中还含有少量的蔗糖、酶类、蛋白质、氨基酸、维生素、矿物质和抗菌素类物质[4-5]。柚子和柠檬含丰富的维生素C，能防止牙龈红肿出血，同时还可减少黑斑、雀斑发生的概率，且具有美白的效果，还有助于预防癌症及减肥[6-8]。柠檬蜂蜜柚子茶可以结合这三种食物功能，达到清热降火、嫩白皮肤的功效。蜂蜜柚子茶，在日本韩国，被称为“黑色素斩草除根”的食物。其原因为维生素C 和L-半胱氨酸相互联合，可从细胞深处使细胞变白，
