摘要:PURPOSE:To provide prervable, half-finished product of salted fish guts, which can be taken by a consumer when the pleas, by packaging the flesh and the guts of fish parately with barrier films. CONSTITUTION:Fish or shellfish (e.g. cuttlefish) is opened and divided into the flesh and the guts. The flesh is washed with saline water (about 3-4 deg.Baume), and dried at a low temperature (about 12-15 deg.C) to remove the free water until about 10-12wt% of the initial weight is decread. The dried flesh is then slitted, divided into small portions, and packaged with a barrier film. The guts are washed, cut into fine strips, and mixed with salt (about 10wt% bad on the guts), ''sake'', ethanol or sweet ''sake'' (about 5-8wt% of the guts), malted rice (about 10- 20wt%, bad on the salt), sugar, and if necessary, asonings, spices, etc. The mixture is packaged with a barrier film. Both packages are frozen, and combined togeter to obtain the objective product.
