本年利润 摘 要：近年来，大豆分离蛋白产品越来越受到了人们的推崇，特别是以大豆分离蛋白为加工原料的素食及保健饮品备受欢迎。除此之外，大豆异黄酮、大豆卵磷脂等产品也得到了一定的发展。随着大豆分离蛋白新产品的面世，对其质量管理的要求日益突出。该文介绍了大豆分离蛋白产业现状，分析了大豆分离蛋白产业的安全管理、加工过程控制对大豆分离蛋白性能的影响，并展望了大豆分离蛋白产品的质量控制方向。
